Buffalo Chicken Anything!

My friend, Hannah, from the Aloha company recently asked me about favorite recipes—healthy versions, of course—which led to me telling her of my family’s love for ‘Buffalo Chicken Anything’! From buffalo chicken 1soup to meatballs to eggrolls to cauliflower to stuffed peppers, we have firmly decided that there are many opportunities out there to ‘Buffalo Chicken’ foods that may have gotten a bit boring. We recently devoured my version of Buffalo Chicken Dip–It’s a great option for Sunday afternoons this football season! This recipe includes full fat versions of cream cheese and yogurt since fat from high quality ingredients is healthier for us (in moderation, of course) than the low fat/no fat versionsfat loss that have been promoted as ‘healthier’ over the decades. I’ve written a few blogs about that! BUFFALO CHICKEN DIP

INGREDIENTS:

4 oz. cream cheese, softened
1 cup plain Greek yogurt
1/2-1 cup shredded sharp Cheddar cheese
1/2 cup hot sauce (I prefer FRANK’S® REDHOT BUFFALO WINGS SAUCE®”)
3 cups shredded or finely chopped (we prefer finely chopped) cooked chicken

1/2 cup crumbled blue cheese

Minced green onions as garnish once baked/cooked.

Carrots, celery, bell pepper and jicama sticks  for dipping.

I encourage organic, grass-fed and highest quality ingredients to support our health–it’s worth it!

DIRECTIONS:

Preheat oven to 350 degrees F.

In a large bowl, stir first 5 ingredients together until well-mixed. Transfer mixture to a small greased baking dish & bake for 30 minutes or until the cheese is melted and the edges begin to slightly brown. You can also mix all ingredients over low heat on the stove until thoroughly blended and piping hot. Sprinkle crumbled blue cheese immediately. Garnish with minced green onions if desired. Enjoy!
